The recipe, Wine Rooster with Spaghetti
Heat the olive oil and over a medium to high heat brown the pieces of rooster little by little.
We take them out on a plate.
In the same oil, lowering the heat, saute the onion and garlic for 3 minutes.
Put the rooster back in and sprinkle with the spices.
Let them release their aroma for 1-2 minutes.
Add a little sugar and extinguish with the wine, pouring little by little.
Rub the base of the pot well with a spoon.
Add the Village Tomato to the grater and a little water, enough to half cover the rooster.
Cover the pot and simmer the rooster until it is well tender, about 1 hour 45' to 2 hours, and the sauce thickens.
Season with salt and pepper in between.

Vegan Recipe Peas

With a knife, cut the carrots into slices and the potatoes into 2 cm pieces. Finely chop the onions.
First, heat 1/4 fl olive oil in a plastic pot. We will leave the rest for finishing the peas.
Add the dry onion and spring onions. Sauté on medium heat without browning for 3 minutes.
Add the Village Tomato to the third and let it boil for 2'.
Add salt and pepper.
Add the potatoes, carrots and peas and mix to coat the ingredients.
Add enough hot water to half cover the ingredients.
Cover and simmer for 20 minutes. We measure the boiling time from the time the roasted peas boil.
After the ingredients have boiled, add the rest of the olive oil that we reserved at the beginning as well as the chopped dill.
Boil for an additional 10 minutes on low heat until all the liquid in the pot has been absorbed and the oily peas are left with only their oil at the end.
